Sausage jambalaya

This amazing sausage jambalaya recipe brought to you by Woman's Day is a satisfying and hearty dinner that comes together in just a little over 30 minutes - a sort of Creole paella.

Method

1.Heat half the oil in a large frying pan on high. Cook sausages for 3-5 minutes, turning, until golden. Remove from pan and slice thickly. Transfer to a plate.
2.Heat remaining oil in same pan on high. Sauté onion, capsicum, garlic and chilli for 1-2 minutes, until tender. Stir in tomato paste, spices and bay leaf. Add rice, stirring to coat.
3.Blend in tomatoes and stock. Bring to boil on high. Reduce heat to low and return sausage to pan. Cook, covered, for 25-30 minutes, or until rice is tender and water absorbed. Serve topped with parsley.

Chicken thigh fillets can be used in place of sausages.
