This amazing sausage jambalaya recipe brought to you by Woman's Day is a satisfying and hearty dinner that comes together in just a little over 30 minutes - a sort of Creole paella.
1.Heat half the oil in a large frying pan on high. Cook sausages for 3-5 minutes, turning, until golden. Remove from pan and slice thickly. Transfer to a plate.
3.Blend in tomatoes and stock. Bring to boil on high. Reduce heat to low and return sausage to pan. Cook, covered, for 25-30 minutes, or until rice is tender and water absorbed. Serve topped with parsley.
Chicken thigh fillets can be used in place of sausages.
