Method

1.Heat oil in a large pan on medium-high. Cook sausages for 2-3 minutes, until just browned.
2.Add tomatoes, stock and 3 cups water, and bring to boil. Add rice, reduce heat to medium and cook for 12-14 minutes, until rice is tender and sausage is cooked through.
3.Stir through beans and cook for 2-3 minutes, until beans are tender. Season to taste. Stir through basil, top with parmesan and serve.

Canned cherry tomatoes are sold in large supermarkets and delis. if you can’t find them, used chopped tomatoes instead.
