Method
1.Cut banana leaf or foil into four 20cm squares.
2.Combine beans, garlic, ginger, rice wine and soy sauce in a small bowl.
3.Place each salmon fillet on a banana leaf or foil square and season with pepper. Top with bean mixture. Gather leaf or foil at top and fold edges to seal. Tie with string to secure.
4.Steam, covered, over simmering water for 5 minutes, until cooked to your liking.
5.Remove from steamer, unwrap and sprinkle with chili and coriander.
6.Heat oil in a frying pan until slightly smoking. Pour over salmon. Serve with steamed rice.
