Method
1.Cook pasta in a large saucepan of boiling salted water for 4-5 minutes, following packet instructions. Drain well.
2.Meanwhile, heat oil and butter together in a large frying pan on high. Saute ham, mushrooms and garlic for 3-4 minutes, until ham is crisp and mushrooms are tender. Add wine, stir, then simmer for 2-3 minutes until almost evaporated.
3.Add tortellini, cream and parmesan. Stir through and season to taste. Serve tortellini sprinkled with parsley and extra parmesan.
Bacon, salami or prosciutto may be used in place of ham.
