Method
1.Cut paneer into cubes. Leave to dry on the chopping board for 15 minutes.
2.Grind cumin and coriander seeds in a spice grinder or mortar and pestle. Heat 3 Tbsp of the oil in a large frying pan over medium heat. Add ground seeds and cook for 30 seconds, stirring, then add onions, ginger, green chilli and garlic. Immediately turn heat to low. Cover with a lid and cook gently for about 10 minutes, stirring once or twice, until onion is translucent.
3.Meanwhile, heat the remaining oil in a medium frying pan over medium heat. Add paneer cubes and fry until golden on both sides. Transfer to a plate. Mix garam masala with ¼ tsp salt and sprinkle over the paneer.
4.Add chilli powder and turmeric to pan of onions and spices, and cook for 30 seconds, then add tomatoes and curry leaves. Cook gently for 5 minutes.
5.Stir in spinach and ½ tsp salt and cook until wilted. Add water, bring to a gentle boil and cook for 2-3 minutes.
6.Add cream and paneer, cook gently for 10 minutes, adding a little more water if necessary.
