Barbecue grilled fish salad

Barbecue grilled fish salad

We’re blessed in New Zealand with relatively easy access to wonderful seafood. Any fish works well with this recipe but one with the skin on will really crisp up on the barbecue & add crunch. Easily grilled outdoors, teamed with super fresh leaves it makes a lovely lunch or a fresh summer evening meal.

Waldorf salad

Waldorf salad

This classic salad makes a welcome change from cooked winter veges and it’s so quick and easy. This version is a tad lighter than the original – in our family, we always mix the mayonnaise with some yoghurt and lemon, and add grapes to the recipe. My favourite accompaniment for the salad is, believe it or not, a bacon sandwich, but the choice is yours as it also goes well with chicken, pork or a nice fillet of pan-fried fish.

Cold brew camp coffee concentrate

Cold brew camp coffee concentrate

Over the warmer months it can be so much nicer to drink a long cold coffee full of ice rather than a hot one and this brew is perfect for taking on the road. This slow technique of brewing coffee creates a brew that is lower in acid than heat expressed coffee so it tastes naturally sweeter. Home cold brew combined with Puhoi Valley Half & Half is a cool glass of summer coffee perfection especially for all those coffee addicts out there!

Travel chai mix

Travel chai mix

This spiced tea should be correctly called Masala Chai as that’s what it’s called in India where it originates from. To most Kiwis it’s simply referred to as Chai. Gently spiced and very comforting it’s a great thing to blend at home as you can adjust the spice levels to suit your own taste. Take a jar on the road or to the Bach and enjoy your own Chai blend wherever you are. A jar also makes a perfect gift – just add brewing instructions. (If you can’t find cassia just add another cinnamon stick).

Scrumptious chocolate icing recipe

Scrumptious chocolate icing recipe

I made a delicious icing a while back including – I think – melted chocolate along with other ingredients. It is the most scrumptious chocolate icing I have ever made, but unfortunately I copied the recipe on a tiny piece of paper from some magazine that I have since misplaced. I think it may have either involved sour cream or a butter icing along with cooking-chocolate melts instead of cocoa. The colour on completion was sort of cinnamon. Please help!
