Method
1.Half fill a deep saucepan or frying pan with water; add vinegar. Bring to a simmer on low heat.
2.Crack an egg into a small bowl. Slide into simmering water. Repeat with remaining eggs. Cook 2-3 minutes, until whites have set and yolks are still runny. Remove eggs with a slotted spoon.
3.Preheat grill on high. Line an oven tray with foil.
4.Spray both sides of bread with oil, place on tray. Grill 2-3 minutes each side, until toasted. Place ham slices onto sourdough.
5.In a small bowl, stir cream, parmesan and garlic together. Spoon onto each toast. Top with a poached egg and spoon cream mixture over. Sprinkle with cheese and season to taste.
6.Grill 4-5 minutes, until cheese melts. Serve with chervil sprig and spinach leaves.
