Method
1.Combine tomato, vinegar and half the oil in a bowl. Season.
2.Preheat an oven-grill to high. Place bacon on a baking tray. Grill turning once, for 5 minutes or until crisp. transfer to paper towels; chop coarsely.
3.Place bread slices on baking tray. Drizzle with remaining oil. Season. Grill for 2 minutes each side or until golden. Rub 1 side of each slice with garlic. Top with tomato mixture and bacon, then thyme. Serve.
For maximum flavour, use juicy ripe tomatoes. Replace bacon with crumbled fetta.
