Waffles with maple syrup

The best ever breakfast dish; classic waffles with maple syrup. The only way to make them even better would be to add a generous handful of berries, or home-made fruit compote.

Ingredients

Method

1.Beat spread, caster sugar and extract in medium bowl with electric mixer until light and fluffy. Beat in egg yolks one at a time.
2.Beat egg whites in small bowl with electric mixer until soft peaks form; fold into egg yolk mixture.
3.Fold in sifted dry ingredients and water. Do not over-mix (mixture may look slightly curdled).
4.Spray heated waffle iron with cooking oil; pour ½-cup batter over bottom element of waffle iron. Close iron; cook waffle about 3 minutes or until browned both sides and crisp. Transfer waffle to plate; cover to keep warm. Repeat with cooking oil and remaining batter to make a total of 12 waffles.
5.Serve waffles dusted with sifted icing sugar and drizzled maple syrup.

Handy hint: Baking powder is a raising agent; it consists of one part bicarbonate of soda to two parts cream of tartar. Gluten-free baking powder, found in health-food stores, is made without cereal additives.
