Method
1.Preheat oven to moderate, 180°C.
2.Spread rice over the base of a 6-cup capacity casserole dish. Sprinkle with fruit.
3.In a bowl, whisk together eggs and caster sugar. Beat in milk. Pour over rice and fruit. Dust with cinnamon and nutmeg.
4.Place casserole dish in a baking dish. Add enough warm water to come halfway up the sides of baking dish.
5.Bake for 30-35 minutes until centre is firm. Remove from baking dish. Serve warm.
Cook brown rice following packet instructions. More cooked rice can be added, if liked. To test whether a baked custard is cooked, insert the point of a knife into the centre of the custard. If it comes out clean, the custard is cooked.
