Ingredients

Method

1.Preheat oven to moderately slow, 160°C. Lightly grease two 12-hole shallow patty pans.
2.Using an 8cm cutter, cut rounds from pan. Ease into recesses.
3.In a small bowl, using an electric mixer, beat eggs and sugar until creamy. Beat in milk and food colouring until well combined.
4.Pour filling into prepared pastry cases. Bake for 40-45 minutes until pastry is golden and filling is just set. Cool in pan 5 minutes, then transfer to a wire rack to cool completely. Serve warm or cold.

If you prefer sweeter tarts, use frozen sweet puff pastry or make your own sweet shortcrust.
