Doughnuts with lemon sugar

It might be hard to stop at one with these bite-size doughnut morsels dusted with lemon sugar, but then why would you want to?

Ingredients

Method

1.In a small bowl, using an electric mixer, beat sugar, egg and butter until light and fluffy. Reduce speed to low then gradually pour in buttermilk.
2.Sift together flour, baking powder and soda. Add flour mixture gradually to egg mixture, beating at a low speed, until just combined and smooth. Chill, covered, 1 1/2 hours.
3.On a lightly floured surface, roll dough into a sausage shape. Cut into 1cm thick slices. Using floured hands, roll each portion into a ball. Press clown gently on each ball to flatten slightly.
4.To make Lemon Sugar; in a small bowl, combine sugar and zest. Set aside.
5.Heat a wok or large saucepan on low. Deep-fry doughnuts in 4 batches for 4-5 minutes, turning constantly, until golden and cooked through. Drain on paper towel. Toss in lemon sugar. Serve hot.
