1.Cook pasta in a large saucepan of boiling, salted water following packet instructions.
2.Meanwhile, heat oil in a large frying pan on high. Sauté cabanossi, 2-3 minutes, until crisp. Add capsicum and onion and sauté, 2-3 minutes.
3.Drain pasta, reserving 1/2 cup cooking liquid. Return pasta to pan with cabanossi mixture, dip, spinach, parmesan and reserved liquid. Toss well and serve with crusty bread, if you like.
If you prefer a spicier version, you could replace cabanossi with smoked chorizo and add a pinch of dried chilli flakes.
