1.In a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain well and return to pan.
2.Meanwhile, in a large, deep frying pan, heat oil on medium. Saute onion, fennel and carrot 4-5 minutes until onion is tender.
3.Increase heat to high. Squeeze sausages from casings into pan. Brown 4-5 minutes, breaking up lumps as it cooks.
4.Stir in wine and simmer until reduced by half. Add tomatoes and bring to simmer. Cook 4-5 minutes. Stir cream through.
5.Add sauce and parmesan to pasta in pan, tossing well over a medium heat to warm through. Season to taste. Serve with extra parmesan.
Add 1/2 teaspoon of chilli flakes for a touch of spice.
