Method
1.Heat oven to 200C. Squeeze spinach to remove excess water. Place spinach, cottage cheese and beaten eggs in a bowl. Season with salt and pepper and stir well to combine.
2.Add the pasta shells to a saucepan filled with plenty of boiling, salted water. Reduce heat to a simmer and cook gently, stirring occasionally, for 10 minutes. Drain well, taking care not to break the shells.
3.Spoon pasta sauce into a 2-litre capacity baking dish. Spoon or pipe spinach and cottage cheese filling into pasta shells and arrange shells on top of pasta sauce.
4.Sprinkle with grated parmesan and bake for 30 minutes or until golden brown.
