Method
1.Heat half the oil in a large frying pan on high. Season steak. Cook for 1 minute each side or until well sealed. Transfer to a plate and cover with foil to keep warm.
2.Heat remaining oil in same pan on medium. Saute garlic for 30 seconds. Add tomato and bring to a simmer. Cook, stirring occasionally, for 8-10 minutes, or until sauce thickens. Stir in olives, basil and sugar. Season to taste.
3.Return steaks to pan with sauce and simmer, covered, for 1-2 minutes or until heated through.
4.Serve steaks topped with sauce and sprinkled with fetta and extra basil leaves. Accompany with crusty bread and green salad.
