1.Wash rice in a colander under cold water, until water runs clear. Then soak in cold water 20 minutes. Drain well.
2.Heat oil in large saucepan on medium. Fry onion and capsicum 4-5 minutes, until golden.
3.Add cauliflower, almonds, raisins, ginger, and spices. Cook, stirring. 1-2 minutes, until fragrant. Add rice and cook, stirring, 1 minute, until coated in spices.
4.Mix water, tomato and peas through. Reduce heat to low. Simmer, covered, 15-20 minutes, until liquid is absorbed and rice is tender.
5.Make spiced lassi by combining yoghurt, water, sugar, salt, cumin and cardamom pods. Pour into glasses and top with chopped pistachios.
6.Season to taste. Serve with naan bread and lassi.
