Ingredients

Method

1.Preheat oven to hot, 200°C. Line an oven tray with baking paper.
2.In a mortar and pestle, pound garlic, juice, mustard seeds, cumin, chilli flakes, peppercorns, turmeric and a pinch of salt to a rough paste. Spread mixture over each cutlet.
3.Arrange tomatoes on tray. Drizzle with half oil and season to taste. Bake, 5 minutes.
4.Sprinkle tomatoes with half coriander leaves. Top with salmon cutlets. Drizzle with remaining oil. Bake, further 8-10 minutes, until salmon is cooked to taste.
5.Top with remaining coriander leaves. Serve with steamed rice and lime wedges, if you like.
