Method
1.Thread chicken onto eight metal, or bamboo, skewers.Cook skewers on heated oiled grill plate (or grill or barbecue) until browned both sides and cooked through.
2.Meanwhile, combine peanut butter, coconut cream, sauce and 2 tablespoons water in small saucepan; cook, stirring, 3 minutes or until sauce thickens slightly.
3.Drizzle skewers with sauce to serve.
You can use bamboo skewers instead of metal skewers, if you prefer. Soak them in water for at least 30 minutes to stop them from burning during cooking, or wrap the ends in foil.
