1.Preheat oven to hot, 200°C.
2.Cook pasta in a large saucepan of boiling, salted water according to packet directions. Drain well.
3.Meanwhile, toss grape tomatoes and vinegar together in a large baking tray. Season to taste. Bake for 6-7 minutes, until tomatoes begin to burst.
4.Combine canned tomatoes, garlic, chilli and sugar in a medium saucepan. Cook, stirring, on low for 1 minute.
5.Gently stir in tuna. Season to taste. Combine pasta, tuna mixture and roasted tomatoes in a large bowl. Sprinkle with parsley. Serve with crusty bread.
Express pasta is quick cooking pasta, available in many different shapes. Use your favourite pasta if preferred.
