1.In a medium bowl, dissolve yeast in milk. Stir in 1 1/2 cups of combined flours and sugar. Set aside, covered, for 40 minutes or until bubbles appear.
2.In a medium bowl, combine butter, egg yolks and salt. Stir in remaining flour.
3.Stir butter mixture into yeast mixture. Set aside. covered, until doubled in size (about 40 minutes).
4.Beat egg whites in small bowl with electric mixer until soft peaks form. Lightly told into batter. Stand for a further 10 minutes.
5.Drop 1/2 tablespoon of batter onto a heated greased frying pan. Cook for 1-2 minutes, in batches of 5, until bubbles appear on surface. Turn and cook a further 1-2 minutes until golden. Serve blini with toppings of choice.
Always cover yeast mixtures with a clean tea towel or plastic wrap, and place in a warm, but not hot, place.
