Method
1.In a large saucepan of boiling salted water, cook pasta 6 minutes. Add peas. Cook 2 minutes more or until tender. Drain. Return to pan. Immediately add butter and garlic; toss until melted and combined.
2.Add chicken, onion, zest, juice and tomato to pasta mixture; toss to combine. Serve with lettuce and cucumber.
You’ll need 1 small barbecued chicken. Use fresh fettuccine instead of macaroni. This will reduce cooking time by half. Low-fat: omit butter and use skinless chicken.
