1.Heat oil in large frying pan on high. Sauté onion for 1-2 minutes, until tender. Add mince and brown for 3-4 minutes, breaking up lumps as it cooks.
2.Stir capsicum and spices through and cook for 1 minute. Pour in stock and bring to boil. Reduce heat to low and simmer 3-5 minutes, until thickened.
3.To make the guacamole; mash avocado with juice in a small bowl and season to taste. Stir tomato through.
4.Spoon mince mixture evenly among tortillas. Top with lettuce, tomato, cheese and guacamole. Serve with lime wedges.
